Project Rescue: CNY’s Leftover Mandarin Oranges Part 2

ONE. Mandarin Orange Chewy Cake (Double Flavours)
Ingredients
- 600g Mandarin Orange Juice (you may add water to preference)
- 100g White Sugar
- 80g Cornstarch
- 20g Tapioca Starch
- Orange Marmalade [ View Recipe ]
- Egg Wash
Method
1. To prepare the mandarin orange juice, add the deseeded oranges to the blender, then strain the mixture to obtain the juice.
2. Add sugar, cornstarch and tapioca starch to the mandarin juice and mix well.
3. Strain once into the pan to make sure there are no lumps.
4. Turn on medium-low heat and keep stirring until thickened and smooth.
5. Add the mixture to a container brushed with a thin layer of cooking oil and let it cool till hardened (approx. 1 hour).
6. When done, unmould and cut into cubes.
7. Flavour #1: Brush on orange marmalade and air fry at 200°C for 8 mins.
8. Flavour #2: Brush on egg wash and air fry at 200°C for 10 mins.
9. Ready to serve hot! Deliciously charred on the outside and chewy soft on the inside, you won’t be able to get enough of this delectable snack!

TWO. Summer Bubble Green Tea
Ingredients
- 2–3 tbsp Mandarin Orange Marmalade [ View Recipe ]
- Rice Paper
- Sugar-Free Japanese Green Tea
Method
1. Brew a pot of green tea and set aside to steep
2. Soak the rice paper for 40 secs.
3. Roll each damp rice paper tightly and cut into small bits (the typical size of bubble tea pearls).
4. Cook the rice paper bubbles in boiling water for 8 mins
5. Scoop up and transfer it into a bowl of icy cold water until it is ready to serve.
6. Add orange marmalade, rice paper bubbles and green tea to a drinking glass and there you have it—the super refreshing Summer Bubble Green Tea! Consume hot for tummy-warming happiness or add ice cubes for the ideal drink to beat the hot weather!
