Project Rescue: CNY’s Leftover Mandarin Oranges [Part 1]
What to do with the remaining mandarin oranges at home now that CNY is over? Transform them into yummy goodies of course! In today’s episode of Project Rescue, we teach you how to salvage your mandarin oranges from the dire fate of heading to the trash bin and instead use them to create delicious desserts and snacks!
ONE. Mandarin Orange Marmalade
Ingredients
- 16–18 Mandarin Oranges
- 700g Caster Sugar
- 1200ml Water
- 1 Pinch Salt
Method
1. Wash the oranges carefully, then peel them and remove the piths.
2. Slice 2 orange peels thinly.
3. In a heat-resistant container, add hot water and a pinch of salt to the sliced orange peels. Soak for 10 minutes and drain well, then set them aside.
4. Cut the oranges into segments and remove the seeds. Wrap the seeds in a muslin cloth or tea bag and set aside.
5. Put the orange segments, water, sugar, peels and the bag of seeds into a large pot.
6. Once boiling, reduce heat to medium low. Simmer and stir occasionally until thickened.
7. Once you have reached the satisfactory gel-like consistency, ladle the hot jam into sterilised jars / containers, leaving about half inch gap from the top and twist while the jam is still hot.
8. Let the jam cool before placing them in the refrigerator.
9. Once the jam is sufficiently cooled, it’s ready to serve with your preferred choice of bread! Enjoy!
Other than bread and pastries, this marmalade also tastes amazing when used for cooking the following savoury dish!
TWO. Orange Marmalade Glazed Chicken Wings
Ingredients
- Mandarin Orange Marmalade
- 9 pcs Chicken Mid Wings
- 1 tsp Pepper
- 1 tsp Salt
- 1 tsp Turmeric powder
- 1 tsp White Sugar
- 2 tsp Light Soya Sauce
- 2 tsp Cooking Oil
- Fresh Mandarin Orange Slices (Deseeded, quantity to preference)
Method
1. Slide several cuts on the raw chicken wings as demonstrated in the video.
2. Add the pepper, salt, turmeric powder, sugar, light soya sauce and oil to the wings.
3. Mix thoroughly and leave to marinate for 2 hours.
4. Air fry the marinated chicken wings with fresh mandarin orange slices at 180°C for 10 mins.
5. When time’s up, shift the fresh mandarin orange slices to the bottom of the chicken wings, then brush the chicken wings with mandarin orange marmalade.
6. Air fry at 200°C for another 8 mins and your mouth-watering dish is ready to eat!
