Lecithin from soybean sources contains a mixture of phosphatides that consists mainly of phosphatidylcholine (PC), phosphatidylethanolamine (PE) and phosphatidylinositol (PI) with minor amounts of phosphatidic acid (PA), and phosphatidylserine (PS).
