Vegan Mooncakes for Guilt-Free Satisfaction

Ingredients:
Mooncake Filling
- 400g Sweet Potato
- 170g St Dalfour Blueberry & Acai Fruit Spread
- 125g Water
- 200g Coconut Cream
- 110g Tapioca Flour
- 80g Corn / Coconut Oil
- Pinch of Salt
Mooncake Dough
- 100g Golden Syrup
- 100ml Neutral Cooking Oil
- 220g All-Purpose Flour
Instructions:
Mooncake Filling
1. Add the water, coconut cream, tapioca flour and sweet potato into a food processor and blend until the mixture is smooth and well-combined.
2. Pour the mixture into a wokpan and add the corn / coconut oil plus a pinch of salt.
3. Stir-fry till a paste is formed, then cool the mixture and portion into 20g balls—set them aside for the mooncake filling.
Mooncake Dough
1. Add golden syrup and neutral cooking oil into a bowl and mix well. lye water until well incorporated. Add flour. Combine and knead briefly to form a soft dough.
2. Add all-purpose flour in 2 separate portions. After each addition of flour, mix thoroughly and knead briefly to form a soft dough.
3. Portion the dough into 25g each to be used as the mooncake dough.
Assemble, Shape, Bake, Rest & Store
1. Flatten each ball of mooncake dough and tightly wrap the pre-prepped filling.
2. Shape the dough into mooncakes and emboss with your favourite design using a mooncake mold.
3. Bake the cakes in preheated oven at 190°C for 6 mins. Apply eggwash and bake it at 160°C for another 15–20 mins
4. Transfer to a cooling rack and store in an airtight container for 1–2 days before consumption.
Feel free to get creative with the filling! You can add in some chopped nuts for extra crunch, or even a dash of vanilla extract for a hint of sweetness. The possibilities are endless, so have fun experimenting with different flavours and textures!
