Chicken Congee with Dried Scallops For 4 persons Ingredients
2 Cups White Rice
1 Chicken
5 Dried Scallops
4 Tbsp Shredded Ginger
10g Green Onion or Spring Onion
1ml Oil
8 Tsp Salt
15 Tsp Pepper
1 Soup Spoon Shaoxing Wine
Light Soy Sauce for Taste
Step 1 Wash the dried scallops and then soak in water until soft. Shred them after that.
Step 2 Cut the chicken into bite-size pieces, and marinate with Chinese cooking wine, light soy sauce, shredded ginger and white pepper for about 20 minutes.
Step 3 Rinse the rice and 1 teaspoon oil, and let it sit for 30 minutes.
Step 4 Pour rice and all other ingredients into the inner pot of the Tefal. Add 7 measuring cups of water, cover the lid and lock it.
Step 5 Press “Pressure Cook” to select the “Porridge” function which has default pressure/time, then “Start”.
Step 6 When the timer beeps, press “Cancel” to open the lid.
Step 7 Season with salt and white pepper.
Step 8 Serve in a bowl sprinkled with cut green onion/spring onion
