Simply Heavenly Pandan Kaya

A favourite among locals and tourists alike. The most crucial part of our popular local delicacy Kaya Toast. Yes, that's right, we're talking about kaya! Follow us as we show you how to prepare homemade pandan kaya that tastes simply heavenly!
This delectable jam is made from coconut milk, eggs, sugar, and pandan leaves, giving it a unique flavour profile that is both sweet and fragrant. It's typically enjoyed on toast, crackers, or even as a filling in pastries. Trust us, once you try it, you'll be hooked!
Ingredients:
- 2 eggs
- 200ml coconut cream
- 120g sugar
- 8 pandan leaves
- 200ml water
- 2 tbsp tapioca flour
Instructions:
1. In a blender, blend the pandan leaves in water till smooth.
2. Strain the pandan juice and pour it back into the blender.
3. Add the rest of the ingredients and blend well.
4. Pour the mixture into a pan and cook on low / medium heat. Stir continuously to avoid burning the kaya.
5. Once ready, pour the kaya into a clean container and set aside to cool.
