An Unconventional Mid-Autumn Treat: Steamed Mochi Mooncakes

Made with sweet potato and St Dalfour fruit jam (100% from fruit!), this unique recipe will challenge and transform your perspective of a good mooncake!
Ingredients:
Mooncake Dough
- 300g Sweet Potato (Steamed and Mashed)
- 2 tbsp Fruit Jam
- 150g Rice Flour
- 150g Glutinous Rice Flour
- 120ml Water
Assorted Fruit Jam (Drizzle)
Banana Leaves (For Lining the Steamer Basket)
Instructions:
Sweet Potato Dough
1. Peel and cut the sweet potato into small pieces. Steam on high heat for 10 mins or until tender.
2. Add sugar to the steamed sweet potato, then mash into puree and let it cool.
3. Add rice and glutinous rice flour to the cooled puree and combine well to form a dough. Then, mix in 2 tbsp of fruit jam and set aside to rest for 30 mins.
4. Portion the dough into 25g each and roll them into smooth balls.
5. Shape the dough into mooncakes and emboss with your favourite design using a mooncake mold. Once done, carefully place the mooncakes on the banana leaf.
6. Put the mooncakes into a steamer and steam for 15 to 25 mins on high heat. (Note: Start the timer after the water boils.)
7. Once ready, serve the mochi mooncake with your favourite fruit spread for an exceptionally creative way to feast this Mid-Autumn Festival!
