Fragrant Corn Chowder with Kukeri
Here’s your next favourite comfort food: super fragrant corn chowder! Delightfully savoury with a good mix of sweet, this simple recipe will warm both hearts and tummies 💗 Also be sure to add a generous topping of bacon bits for a lovely texture and burst of flavour with every mouthful!
Corn Chowder Recipe
Ingredients
- 1 Large Potato (peeled & diced)
- 2 Carrots (peeled & diced)
- 2 Yellow Onions (peeled & sliced)
- Lots of Sweet Corn
- 500ml Chicken Stock
- 500ml Hot Water
- 200ml Thickened Cream
- Salt & Pepper to taste
- Bacon Bits (topping)
1. Prepare your desired quantity of corn kernels. Refer to our kitchen hack below for an easy way to remove corn kernels and keep corn fresh for longer!
2. Add corn kernels, potato, carrots and onions to a pot (use the stainless steel inner pot of the thermal cooker).
3. Add chicken stock and water.
4. Bring the soup to boil and let it simmer for 30 minutes.
5. Place the pot into a thermal cooker and set aside for 8 hours.
6. Once done, add thickened cream to the soup and bring it to a boil once again.
7. Add salt and pepper to taste, then sprinkle with bacon bits. Your fragrant corn chowder soup is now ready to serve! Enjoy!
Note: Quantity of all ingredients may be adjusted to preference, but Chicken Stock and Hot Water must be kept in 1:1 ratio.
