Berry Huat Cake
For those who are unfamiliar, "Huat Cake" refers to steamed cakes with a fluffy and light texture + an iconic bloom which resembles a flower. Playing on the Hokkien term "Huat", which means "prosper" or "rise", Huat Cake is commonly enjoyed during Chinese New Year for its auspicious symbolism.
And if you ask any Singaporean, I'm sure they'll agree that Huat is not enough—we all want to be berry, berry huat! 😉 Enter the Berry Huat Cake, a delightful fusion which boasts an additional portion of prosperity while combining the delicate fragrance of the Huat Cake with the irresistible sweetness of berries!

Ingredients needed
- 3 Eggs
- 250g Sugar
- 300g Flour 面粉
- 200ml 7-Up
- 1–2 Tbsp St Dalfour Red Raspberry Jam
Method
1. Add the eggs and sugar into the blender. Blend at high speed mode till it's foamy. (Note: You can also choose to use a hand whisk or cake mixer!)
2. Pour the mixture into a mixing bowl. Sieve in the flour and add 7-Up. Mix well.
3. Scoop some batter to another bowl. Add in 1–2 tbsp of St Dalfour Red Raspberry Jam and mix well. (You can adjust the amount to your preference! Add in a few more tbsp for a stronger fruity taste.)
4. For enhanced visual effect, add some food colouring.
5. Pour the batter into a baking paper-lined round container till 90% full.
6. Steam it over high heat for 40 mins or till it's completely cooked.
7. Add more jam to the cooked Huat Cake for extra flavour and you're all set to welcome Chinese New Year!
