Baked Salmon with Mixed Vegetables
Follow our easy recipe and a well-balanced nutritious meal will be ready in no time, with amazing vibrant colours to boot! 🐟🥕🌽 Just prepare all the ingredients and pop them into the oven!
Ingredients (quantity to preference)
Marinated Salmon
- Salmon Slices
- 1 Dash Pepper
- 1 Dash Salt
- Sliced Garlic (a few cloves recommended)
Vegetables
- Red / Yellow / Green Bell Pepper
- Zucchini
- Carrots
- Sweet Corn
- Yellow Onion
Feel free to replace the vegetables with your own favourites, but do take note that different vegetables may require different baking durations.
Method
1. Marinate the salmon slices an hour in advance. Rub the salmon slices with salt and black pepper.
2. Add in the sliced garlic, then mix well and keep the marinated salmon in the fridge till ready to cook.
3. Chop all the vegetables into bite-sized pieces.
4. Add some butter to a baking tray lined with aluminium foil.
5. Add the marinated salmon slices and mixed vegetables, then cover with aluminium foil.
6. Preheat your oven to 200°C for 10 mins.
7. Once done, bake the salmon and vegetables at 200°C for 25–30 mins.
8. Sprinkle some salt and black pepper before serving. Enjoy!
